the weirdest, best recipe i've ever attempted.

i made baking frankenstein.
you ready for this?

we had a huge container of leftover cantaloupe from a cookout, and i had to do something with it...

... cantaloupe muffins.
oh yes i did.

the recipe, if you dare.
loooooooosely adapted from here
- 3 eggs
- 3/4 c oil
- 1 tbsp maple syrup
- 1 1/2 c white sugar
- 2 tbsp vanilla extract
- 1 1/2 c cantaloupe puree
- 1/3 c orange juice
- 3 c all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 2 tsp nutmeg
- 1 tsp ground ginger
- 1/2 c chopped walnuts
- 1/4 c chopped prunes
- 1/4 c currants

1. get out two bowls: in one, combine your wet ingredients and sugar. in another, whisk your dry ingredients together.
2. combine your wet and try, stirring just until mixed. add your nuts and dried fruit, and fold.
3. pop those freaky muffins in the oven for 30-35 minutes at 325*.

the verdict?
they were so, so good! my mom and i couldn't stop raving about these moist, plush little muffins.
you don't taste the cantaloupe at all. think zucchini bread... but better!

and cantaloupe is really healthy, to boot!
so if you happen to find yourself with some reject cantaloupe, you know what to do!

    I haven't made it yet, but there's a pancake soup I've been meaning to try:

  2. This post just got me so excited! Canteloupe is HANDS DOWN my favorite fruit and obviously I love muffins because who doesn't. What a great idea! Unfortunately I doubt I will ever, ever find "reject canteloupe" in my house but on the rare occasion that I do, these muffins will be made immediately. :)

  3. This is awesome - I love the way you think ;) Perfect way to not waste anything, too! I think experimenting in the kitchen can lead to some of the best creations, hands down. Why'd they ever teach us to follow directions in school?!

  4. i think u just turned the earth over with this recipe! who would have thought using cantaloupe in baking.. thats unheard of! ive never had baked cantaloupe! im totally thinking papayas need to be used next haha. ... what about grapefruit.. or DRAGON FRUIT! oh wow.. got my head spinning!! <3

  5. I would never in a billion years think of a CANTALOUPE MUFFIN. Those seem awesome though! If I ever have a lot of cantaloupe in the house- you know what I'll be making!! (& I love squishy muffins!)

  7. Cantaloupe Muffins?! That's genius. Hehe. Wonder why no one's thought of it before. I'm not too creative in my recipes to be honest so even when I cook something non-freaky, it usually turns out a little weird. Lol. But I've got used to it and I think I churn out food only my tastebuds will like since you know, they've adapted. x)

  9. Seriously genius. I bought a canteloupe last week and when I cut it, I knew it had to be eaten within the next day or it would have gone bad. P and I ate the entire thing in a day, which is okay because we love it but now we have another use for my bad melon picking skills.

    No, I have never made a freaky recipe.. Maybe some scones in my childhood, that was based on "take what you got".
    But, I will make something crazy though, as I am planning to try out this recipe ;)

  11. Whoa! Sounds freaky at first, but the end result looks AMAZING! The cantaloupe puree definitely sounds like it'd make for a moist cake. Now, why can't I be creative in the kitchen like you??
