do me a favor.

please don't ever fork out your hard-earned cash for salad dressing.


i eat my fair share of bunny food, so how to i affort all that dressing, and stay healthy?

i make my own!
making your own salad dressing at home is super-cheap, quick, and much healthier than store-bought.
(unless you're into HFCS and "binders..." then nevermind!) 

well, now what?
go grab your favorite dressing from the fridge.
yeah, the one you couldn't live without? that one.
i'll wait...

what type of dressing is it? vinaigrette? creamy? fruity? herbed?
check your ingredients. most-likely, you have what it takes to make it in your fridge.
for free.
 
most dressings can be made in the blender in about ten seconds, no magic required.
sounds real difficult, right?

my personal favorite, honey-mustard
carrot-ginger, good enough to buy miso for
classic balsamic vinaigrette

so there you go! a few good recipes to get your brains and blenders moving.
i love how when you make dressing yourself, you can choose exactly what you're in the mood for, and can adapt to what you have. the possibilities are endless!

next time you make a salad, don't run to the store! just open your fridge.

i made some food this weekend.

hey guys!
hope your weekend was as amazing as mine!

mine was awesome for many reasons, but let's focus on the food, shall we?
as usual, saturday was family dinner night.
but it was an unusually EXCITING dinner.

wanna know why? let me explain...
since i have been eating meat-free, i haven't encountered a single problem. no one thinks i'm weird, there's always food for me to eat, and i get plenty of protein (right girl?).

the cool thing?
my mom has gone mostly vegetarian now! she and i have had a few discussions about why i went veggie, and she's joined me! not only that, but my boy watched food, inc. and has really stepped up his eating habits (and totally supports me meat-free).
both of them are totally transforming their diets, and i'm so proud!

soooooooo, where was i? dinner, right?
for the last few weeks, mom and i have started making more meat-free meals for the family.
as a family that's lived off meat-starch-veggie for all of our lives, this is huge! so saturday was no exception.

and whose recipe did i consult for my veggie venture?

my future hubs, bobby flay of course.


my baked version of bobby's falafel

1 can organic chickpeas, rinsed and rubbed dry with a towel 
4 cloves garlic, chopped
1 carrot, grated
1/2 medium onions chopped
3 tablespoons chopped fresh parsley leaves
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh cilantro leaves
1 tablespoon lemon juice
2 teaspoons cumin
3 teaspoons coriander
2 teaspoons smoky paprika
2 teaspoons hot curry powder
Scant 2 teaspoons baking powder
pinch kosher salt
Freshly ground black pepper
- saute garlic and onion until translucent (3 minutes over medium)
- throw everything in in the food processor and pulse until roughly combined (scraping down the bowl when needed)
- form into 4 patties, pressing tightly so they don't crumble
- spray with pam and cook on your grilltop pan (or bake at 425* until brown)
serves 4.

i'm just gonna put it out there - my dad ate one, my mom and i ate one, and my boy ate two.
slam dunk.

also on the menu?

sweet potato fries,
sliced thin, sprayed with olive oil, and sprinkled with garlic powder and steak seasoning (ironic for our veggie meal, no? they're a delicious combo of seasonings!)

i may have made my boy addicted to these :)
aaaaaaaand...

you will never see me post a meal without a kitchen sink salad.

quick bar reviews:

gnu bar orange cranberry:
not bad. orange tasted a bit fake, but i had to try these for my girl!
my mom and i got a free sample at whole foods, and can't complain.


my favorite part is the bird "it works!"
i think that means heck yes this bar will (...ahem) clear you out.


raw revolution raspberry and chocolate:
my thoughts? if you NEVER eat sugar, you will be fine with this bar (i was).
otherwise? it might be a bit too "earthy" tasting for you.
a word of caution: i think it had 300 calories in it.
that might matter to you if you're trying to lose weight.
it's kinda a "meal replacement," i guess.

family gatherings and product review.


how insanely gorgeous was the weather this weekend???
it was PERFECT here. so beautiful.


le sigh.
anyways, onto food, shall we?

i haven't been very good about taking pictures of my daily eats recently, but i think that's a good thing.
don't get me wrong, i love reading daily eats blogs (hello kath!). i think it can be really interesting to see how other healthy bloggers eat, but most of my food is pretty repetitive and not photogenic. think about when your stomach doesn't feel well... usually, that's not when you try out an exotic new thai dish. i tend to kinda think this way:
"um.. i'm hungry. helllloooo conveniently placed apple!"

you guys know what an apple looks like, right?
ok, i think we're on the same page.

also, i think it can be easy to get trapped into taking pictures of EVERY bite you put in your mouth. it can turn a bit obsessive, and i don't really want to head down that road. i enjoy my food with NO GUILT, and i enjoy the pictures i do take, so why fix it if it ain't broke? capishe?

just because it's been about a week since i bombed your google readers with a kitchen sink salad, here's your fill for this week.

spinach/kale base, bell peppers, cukes, avocado, tomatoes, radishes, carrot, strawberries, chopped dates, stacy's pita chips, salsa, hot sauce, and nutritional yeast!

om nom nom. cheeseeeeeeeee.

mom always jokes that i can't go back to school, because who will make her salads???
i'll hire an intern, mom. no worries.

also, a new addition to KSS (kitchen sink salads) worth sharing:


foodie review:
riceworks sweet chili rice chips
these are SO good! mom and i got a huge box to share from costco probably a month ago, and we've been slowly working our way through ever since! if you don't already crumble chips in your salads, you guys are seriously missing out. it's like croutons that don't taste like dirt!

they make quite a few flavors, but i've only had the chili. i can't wait to get my grubby little paws on some of the other varieties... especially the baked cinnamon!!!

they're made from whole grain rice and gluten-free, so they're pretty dang awesome for someone with food sensitivities (like my celiac sister).

nor is it a mutant - not stellar lighting, i'll admit.


my first savory oats experience!
- 2 tbsp oat bran
- 1/4 c rolled oats
- 1/2 c unsweetened coconut milk
- pinch salt
- insane amounts of black pepper
- garlic powder
- onion powder

after i cooked it almost all the way, i stirred in a laughing cow swiss cheese wedge.

like cheesy mashed potatoes,

prime example of why i don't document everything i eat.
allow me to introduce you to daily breakfast:
- 1/2 c cottage cheese
- sprinkle stevia
- mixture of 2 kinds of cereal... usually trader joe's high fiber cereal and ezekiel cereal.

and it's 5:30am.
double yawn.


but tasty!?!?

we also had a little family get together on saturday.
usually, mom and i try to cook for the family on saturday since it's one of two nights dad's home for dinner (he works in illinois).

the crowd usually includes me, mom and dad, my little brother and sister if they aren't out on dates, my older sister and her guy, my nephew, and any other scragglers who are left high and dry and need some grub.

on the menu:
- roast
- mashed potatoes
- green beans
- roasted sweet potatoes (low and slow)
- mushrooms sauteed in red wine reduction
- ciabatta bread from tj's
- homemade fro-yo!

wanna know a secret?

there's a big part of my life i thought it was high time to fill you guys in on:
the ritual of the kitchen sink salad.
yeah, you heard me. all those blobs of veggies i take pictures of and try to pass off as food porn? those are my pride and joy.

but first, some background info.
you see, just about every day of my life since i moved home from school, i've embarked on a lunch mission - veggies. that's when i started trying to eat something else other than turkey for every meal of every day (you think i'm kidding!) i mean, breakfast is pretty simply meat-free (hello, oats?). dinner is, too; even though my family always has a meat-based dinner, mom and i make sure to include a good side dish and veggies, so i was set... but lunch on the other hand is an elusive little meal. my old faithful? sandwiches... filled with turkey. daily, unfortunately. houston, we have a problem.

true confessions: growing up, i hated salads. despised. they literally made me gag. i mean, other mixed vegetables and i were like the math kids and the band kids in high school... they coexisted, but didn't really have much in common.
but salads were a different story. eating lettuce was like chewing paper to me, and carrots and i FOR SURE didn't get along. top if off with croutons that tasted like dirt, and i wasn't pleased. at all. we were kinda like the band kids and the cheerleaders... less peaceful, more girl fights (sidenote: this is said in love. i was a total DORK in school, and am even more-so now).

so daily salads were foreign territory. and insane.
but i challenged myself to something i HAD to conquer. i was determined to make a salad for lunch that not only would not invoke nausea, but actually might... you know... taste good?

enter: the kitchen sink salad saga.

it all started out simply enough. for the first time in many years (thank you, henrico county public schools), i was home at lunch-time. i could pick anything i wanted for lunch! and since i was trying desperately to eat more veggies, i thought it would be a good time to ease into salads. when i got hungry enough, i started just grabbing the usual suspects: spinach, carrots, cucumbers, tomatoes, etc., and i realized it wasn't that i didn't like vegetables... i just didn't like how other people ate them!
          for instance: i hated the skin on cucumbers; thus, you guys will ALWAYS see peeled cukes. same goes for carrots. if i used a vegetable peeler on them to make thin strips, i actually liked them. shocking, really.
          and newsflash: i discovered that you can, in fact, put more on salads than croutons. it seemed INSANE to me at first to put... i don't know... a STRAWBERRY on a salad? ludicrous! (is it sad that i had to spell-check that because i wanted to type ludacris?!?)

so yes America, this nutrition major and healthy-living blogger used to be a hardcore hater of bunny food. but i came around. and since then, i've developed quite the knack for making said meal. observe.

how to make your very own kitchen sink salad.
because clearly, you have NO idea how to make a salad on your own.

1. grab tons of crap from the fridge. hell, grab the fridge. you're gonna need it.

how insane is all this!?!? i had to show you guys.

2. get your bowls, cutting board, knife, and a towel.
because trust me, your hands will need a towel making this.

i can't get over it.

3. fill your bowls with a little of your base greens (i use spinach for iron!)
this is a great place to use home-grown veggies from the garden, y'all!

4. chop your veggies, and toss place atop greens.
zeee veggies:
- bell pepper
- tomato
- carrot
- jalapeno
- scallions
- red onion
- grilled veggies
- cukes
- celery
- mushrooms
- avocado
- sundried tomatoes


5. add your toppings (this is sounding more like an oats post...)
my toppings usually include:
- strawberries (ludacris? ludicrous!)
- dried cherries
- crushed FSTG multigrain crackers
- feta cheese crumbles
- nutritional yeast
- hemp seeds (slivered almonds for la mama)
- cracked black pepper
- Sriracha insanity
- peach/mango salsa (or my flavor of the week... i'm addicted to salsa)
- chili and lime hot sauce (again, or the new flavor i snuck into the cart)
- trader joe's grainy mustard

just today's. yeah, that's right.

6. sit back and realize how absolutely insane you are. i mean, most people manage to eat a salad even though it's from wendy's.
i'm a spoiled brat, and spend 30 minutes daily on salads.
and those toppings? enough to make my new buddy jessica proud (have you seen her daily oats? holy crap!). speaking of, i literally danced today when i saw her mention me on her blog! she was one of the first blogs i ever read, and definitely my favorite! to see my little baby blog on her site? bliss. if you are crazy enough to not know who i'm talking about, hop on over there now! it's ok, i'll wait.

one month veggie!

well i have a bit of news for you all! ready?


today marks my first month meat-free.
wahooooooooo!

why did i go meat-free, you ask?
let me back up a bit...
         as a child, i was a very hearty eater. i liked food... a lot (some things haven't changed)! i was always very active (thanks swim team!) and had the metabolism that goes along with it. so naturally, i ate a lot of whatever was served. mom did a great job of providing wholesome foods for us, usually a meat (lots of chicken), bread, a starch, and a veggie (carrots or canned grean beans normally). good food. the problem was none of us liked veggies... so those often got skipped. if you don't eat veggies, what fills a growing athlete's belly?
meat. a lot of meat.
even though i wasn't super crazy about the texture (or taste, really) of meat, i ate it because... i was hungry! as i got older, my taste for meat started to fade as i met new friends, branched out, and explored new cuisines. i made a shocking discovery - other cultures have WAY better food than we do.

now, don't get me wrong. if you want to borrow money from/apologize to/woo me, the way to do it would be with a bag of french fries in hand, so i'm not knockin' the old U.S.A. this girl loves her some fries. but for the first time a few years ago, my eyes were opened to a whole new world of spices, flavors, and ingredients, and i wanted to know more. i was hooked! i started going to quirky, ethnic restaurants and ordering things i couldn't pronounce (like this!). i started baking with alternate flours from the bulk secion! and i started noticing dramatic differences in my health - mental, physical, and emotional.

and you know what?
i like other things way more than meat.
period.

i'm not sure when it was in america's history that a good meal started revolving around a mammoth slab of cow with buttery mashed potatoes... not to say that there's anything wrong with steak, but when did such lavish excess become standard? since my "awakening," i've started pursuing eats that are nutritionally diverse - a balanced (tasty!) mix of protein, spices, fats, fruits, and veggies. unfortunately, i've also been exposed to new information that puzzles me...

... food isn't just food anymore, y'all. especially meat.

seriously... 100 years ago, people just ATE. they ate what they could, when they could, because who knew when they could eat again? there were no diets, no cleanses, no pills, no genetically modified organisms, no hormone-fed chickens, no bpa-free waterbottles. you ate to live. it's not so simple anymore, is it? it's hard enough to manage your weight, but then add vitamin deficiencies, organic products, and artificial sweeteners, and you literally could spend your life scared to death (info overload, anyone?).


there are so many things in life i cannot control - toxins in the air, genetics, car accidents, heartbreak, and misunderstandings to name a few, but what i eat is one i have power over.
so my (simple) reasons for going veggie stem from that knowledge*:
1.  i don't like that i don't know what's in my meat. farmer's spray their grass with pesticides, administer antibiotics to sick livestock, feed them genetically modified soy and corn, and house them pretty tight... michael pollan shoutout. they do what they have to do to make their living - even organic, grass-fed, hormone-free farms have flaws. i can't blame them with the way the economy is.
2. my family's history is full of heart disease and lung/breast cancer. saturated fat and hormones can increase your risk.
3. it's not necessary in my diet. eating meat bumps out an opportunity for me to add in much-needed veggies, fruits, and whole grains. i get plenty of protein and iron through cottage cheese, hemp and flax seed, nuts (and butters!!!), legumes, greek yogurt, etc.
4. i don't really like it. i think it smells/tastes/looks/feels/chews funny. yeah, i've five.

* i didn't link any research or references to my reasons because you guys are intelligent and informed. you also have your own opinions, and i would never force mine on you. i've been researching my decision for about a year, and i couldn't collect all the information that's impacted my choice in this one post.

Luna Protein Cookie Dough
i liked this bar ok... for a bar. made with unpronouncables. and soy. and hydrogenated oils. so basically, i ate this like a cookie and called it a day. hey, i was hungry.
5/10 (don't shoot me, luna fans!!)
